Wasabi Glazed Salmon With Sesame Brown Rice And Roasted Asparagus

I am a foodie that likes to eat healthy but I also want to have every morsel of food taste delicious.  Wasabi Glazed Salmon  served with Sesame Brown Rice with Roasted Asparagus and a marinated cucumber salad is so full of flavor that you may think you are dining in a nice restaurant instead of having dinner at your kitchen table.

Salmon is a fish that has become popular and is usually easy to find at your local fish store or market, often on sale. Not only has the fish become widely available, it is also recommended as part of a heart healthy diet plan because of its Omega 3 fats. Nutty tasting brown rice mixed with sesame seeds and roasted asparagus adds nice texture and flavor to the meal.

If you have followed my blog, you know that my husband loves being in the kitchen as much as I do. Many times he will be right there helping with my mincing, dicing and all the cleanup. Remember…he calls himself  “the kitchen slave”. He is also a very good cook and many times prepares our meals.

For this meal we cooked together. The Wasabi Glazed Salmon is my husband’s dish and he never measures. I watched and will give you “his recipe” as closely as I can.  

Wasabi Glazed Salmon

Preheat the oven to 450 degrees for asparagus then reduce to 350 for the salmon.

  • 1  to  1 1/2 lb. piece of salmon (for 2 persons)* Adjust recipe accordingly.
  • 1 tsp. sesame oil
  • 1 tsp. tamari
  • 1/4 tsp. white pepper

Place the salmon in a bowl with above marinade, toss to coat and let marinate for up to 1 hr.

  • 2 Tbsp. dark brown sugar
  • 2 – 3 tsp. wasabi paste
  • 1 tsp. sesame oil
  • 4 tsp. tamari
  • 2 tsp. lemongrass paste
  • 2 to 3 tsp. grated ginger
  • 1/2 tsp. garlic powder

Mix the above ingredients in a bowl and set the sauce aside. In the meantime, coat a ovenproof skillet with peanut or vegetable oil and heat. When hot, place the salmon presentation side down first and cook about 1 1/2 to 2 minutes each side. Top the salmon with the sauce and bake in a 350 oven for 5 to 7 minutes according to the thickness.

Sesame Brown Rice With Roasted Asparagus

  • 1 c. brown rice
  • 6 – 8 spears of asparagus
  • 1 tsp. olive oil
  • a pinch of salt
  • 1 tsp.  sesame seeds
  •  2 additional tsp. toasted sesame seeds
  • 1 tsp. sesame oil
  • 1 tsp. tamari
  • 1/8 tsp. white pepper
  • 1 Tbsp. butter

Cook brown rice according to package directions. In the meantime, place the asparagus on a roasting pan and drizzle with the olive oil. Roll to coat and  sprinkle with 1 tsp. sesame seeds and a pinch of salt. Roast at 450 degrees until just starting to brown on edges. Remove from oven. When cool enough to handle cut into pieces. When the rice is done, drain and place in a bowl with 2 tsp. toasted sesame seeds, sesame oil, tamari, pepper, butter and asparagus. Toss to mix.

The wasabi glazed salmon is a dish that we prepare throughout the year. Most times we serve the salmon with a cool, crisp salad of  either marinated cucumbers or a slaw with asian dressing.

    Jacques cooks too..I must admit we don’t do it together though:) It’s his meal or my meal.not usually combined..unless there is roasted meat involved..I leave that to him..and the BBQ:)

    1. Hi Charlie, My husband and I really enjoy being in the kitchen working side by side. This meal has lots of flavors that do well together. We try to eat brown rice over white as much as possible unless the flavor just doesn’t go well in a particular recipe.

For the marinated cucumbers that I serve with Asian inspired dishes, I like to use lime juice and rice wine vinegar, sweet chili sauce, fish sauce and sometimes a touch of sugar depending on the cucumbers themselves.

    1. Hi Boleyn, The marinade isn’t spicy but the glaze has a little bite from the wasabi. If you like the Japanese ingredients in this recipe, I’m sure you will enjoy the dish…just up the wasabi amount to your taste.

You might want to cut the salmon into portion sizes for easier turning…other than that I don’t think you would have any problems with the recipe. I think your cast iron skillet would work great.

  12. Karen, we adore salmon (and ocean trout), and this recipe looks like a great way to prepare it. I’m not a big fan of brown rice though – do you think it might work with white rice instead? And I think your first line is so true – I want every mouthful I eat to be glorious. I’ve never been one to eat something just for fuel. 😉

    1. Hi Celia, I’m glad you like this meal. Absolute, use white rice if you don’t care for brown. You will actually have a better contrast of color on your plate using the white. Yes…every mouthful should be exciting when you eat or you are only eating to live.

All these items and flavors are so complementary to each other, and I love the little kick of the wasabi in the glaze on the salmon. Definitely umami going on in these two dishes. How nice that your husband likes to cook, too, and that he’s so adept in the kitchen…even if he doesn’t measure to make it easy for the rest of us! 😉

  27. The sound of this dish has a lot of appeal to me, Karen. I adore wasabi and salmon. I had no idea you could get lemongrass paste, I’m going to keep an eye out for it in the future. I usually make my own by pulverizing the lemon grass with a blender, but it’s still really difficult because it’s still so woody.

    1. Hi Eva, I know that you try to cook and eat healthy and I think this is a meal that you will like. Yes, I buy lemongrass paste in the produce department. It comes in tubes and you keep it refrigerated. It is a lifesaver for me as markets where I live don’t carry lemongrass. I’m growing it in my lakeside Maine garden and will pull the plant when we close the cottage. Hopefully I’ll have some nice stalks at the end of the season.

      1. Just a note to say it turned out great! Not enough left for his evening meal, but I will be adding the salmon to my garden lettuce for my lunch. I do agree that an occational treat is great. I have loyal fan to my cheesecake and he raves about it on the air every spring when I make it for him. I tell everyone that it is the quntity of food which can kill you, not the food itself. Portions are everything. Might make this for mom next month when we come over for the new TV shows. That and some dessert. Should go great! For me, I gotta get back to working on bran muffins for a client a batch of pumplin quick bread and carmel rolls for my sale tomorrow in the park. Got plenty of paintings, now just need to finish the baked goods. :))
