Is there such a thing as a gourmet meatloaf sandwich? After making a wonderful meatloaf sandwich on toasted herbed foccacia with caramelized onions and truffled ketchup, I think you could call it gourmet. If you don’t want to call it gourmet then just call it delicious. But whatever you do, make the sandwich.
My husband and I love meatloaf and I make several different ones…two of our favorites are a traditional meatloaf and a Mexican meatloaf. If you have read my posts about these two varieties, you know that I make two smaller meatloaves instead of making one large meatloaf. We eat one the night it is baked, the other is wrapped up to have for meatloaf sandwiches.
Something wonderful happens while the meatloaf rests in the refrigerator over night…the flavors seem to enhance and the texture improves just like when you make a rustic country pâté or meat terrine. The result, when you are ready to make your sandwich is delicious. Now if you like, you can make your sandwich with cold meatloaf on soft white bread with just ketchup…my husband loves it that way. If you want to get fancy, add a pickle spear and some chips. If you would like to make the sandwich special and serve it for dinner along with a mixed green salad, then try this recipe…I think you will love it.
For my basic meatloaf recipe click here. For this particular meatloaf I made a few changes. I sautéed onion, fresh fennel and garlic and used fresh thyme in my seasonings. Instead of using Worcestershire sauce in the meatloaf and as a topping, I used steak sauce which has a little extra taste and body. The most important thing when making a meatloaf is for it to be well seasoned and moist.
Caramelized onions gives this sandwich a wonderful depth of flavor. Slice onions (one onion for each sandwich you will be making) and add to a skillet over medium heat with some olive oil, salt, pepper and pinch of sugar to help the caramelization. Sauté until the onions turn translucent, then turn the heat down some and cook slowly until the onions are soft and caramelized.
Take enough ketchup for the sandwiches you are making and add a little white truffle oil. Truffle oil is very strong and a little goes a long way. You can always add more…so start with a small amount and taste until you have the taste you like.
Slice the meatloaf while cold and warm slightly.* I warmed the meatloaf under the heat lamps on my stove…you could put it in a warm oven for a just a few minutes…you want it just warm but not hot.
Slice the foccacia in half and remove the center of the bread…leaving it about a half-inch thick. Brush with bread with olive oil and lightly toast. Assemble your sandwich and enjoy…it is that simple.

I served my sandwiches with a green salad simply dressed with an olive oil and sherry vinegar dressing. My husband and I felt we were eating something more than just your average sandwich. It was easy to put together but also a memorable and delicious meal. We thought we were having a gourmet sandwich for dinner.

There is nothing better than a meatloaf sandwich! We do the same thing you do, make 2 smaller ones – if it’s just the two of us – and put one away for the next day. I never thought to put truffle oil in ketchup but I will have to try it!

I am stealing your idea of making two smaller meatloaves – what a great idea. I would say this looks gourmet! My husband used to work in a nice restaurant in downtown DC before we were married and he said the most popular lunch item was their meatloaf sandwich. I love the onions on top and the truffled ketchup. I could eat this for breakfast!
Hi Becki, I started making two smaller loaves so that we could have one and keep one for sandwiches and it works out great. They also don’t take as long to bake which is a good thing. The onions and truffled ketchup made the sandwich especially good.
A few months ago I was watching an episode of America’s Test Kitchen and they were talking about the first recipes for meatloaf. There were things in there that would make your hair curl. Just unnatural. Thank goodness that meatloaf recipes have evolved to this deliciousness. I agree with you, meatloaf the next day is almost better than the first.

I have never made a meatloaf before – not sure it is something my hubby would enjoy – not that that is my excuse, guess we were never brought up eating it. I think meatloaf if an American tradition?

Hi Mandy, I think a lot of people would consider meatloaf to be an American tradition. We do eat a lot of meatloaf but I think our tradition came from German (hackbraten and leberkase) and French origins (terrine and pate). It makes a terrific meal served hot and wonderful when cold in a sandwich. Just think of it as a fancied up hamburger.

Love your idea of adding sauteed onion to the meat mixture, copying that idea together with the mini meatloaves. Agree, meatloaf taste better the next day and what’s not to like about a gourmet meatloaf sandwich. Salads dressed simply are the best..
Hi Norma, I think the secret to a good meat loaf is making sure it has lots of flavor. Sautéing the onions really does help. Two smaller loaves really works…one for the meal and one for sandwiches. Adding a simple green salad to this sandwich really makes it a nice dinner.

If they DON’T … they should, because this meatloaf sandwich certainly qualifies as something above a run of the mill meatloaf sandwich. Although I don’t know that I have the delicate palate for ‘truffle oil’ in my ketchup, I’m all over that caramelized onion. It’s great on a goat cheese, proscuitto pizza and I still have a small container in my freezer for when I want to add a powerful flavour hit to a dish without standing over a stove and making another batch. 🙂

Fresh breadcrumbs could be the part of my problem, also I don’t think I was putting enough breadcrumbs in. Appreciate the tips because I do love a good meatloaf.
I think you will see a difference. I usually use my Cuisinart and make enough to fill a large zip lock bag. I keep them in the freezer for whenever I need fresh breadcrumbs.
This is my kind of comfort food. Caramelized onions, chewy bread, and delicious meatloaf. A perfect dinner. Now where’s that bottle of wine?

Gotta love leftover meatloaf in any form – including a sandwich. Of course this also reminds me of a horrible thought from my past. We were visiting my in-laws who were wintering on the Florida panhandle. i made meatloaf the night before, and leftovers were in the fridge. My wife and I were walking the beach, and then started talking about a meatloaf sandwich for lunch. Upon our return, the leftovers were gone because my father-in-law didn’t want leftovers in the refrigerator! …. and to this day, we don’t let him forget it!

I have to say “oh my goodness” back to you and thank you for your very nice compliment. I do have a very loyal readership. My blog is very different and if you read about what not to do when creating a blog…it is mine. I’ve always marched to a different drummer and I consider myself very lucky that people enjoy my varied subjects. If I can make a non meat eater drool, I consider that a real compliment.

I love this post! Meatloaf has never looked so delicious and up-market! I’ve never considered using steak sauce instead of Worcestershire sauce — great idea. I’ll definitely give this a try.
