Strawberry Shortcake, Gluten Free

Strawberry Shortcake, the classic summertime dessert, made with sun ripened strawberries piled on top of a buttery shortcake and finished with a large dollop of freshly whipped cream is a taste of heaven and this one is gluten free.

When I had strawberry shortcake growing up, it certainly wasn’t like the one I’m sharing with you today. No, back then it was made with pre packaged little sponge cakes that we bought at our local grocery store and, more times than not, the strawberries we used came from the frozen food section. We had it with a scoop of vanilla ice cream but I don’t ever remember having the dessert with real whipped cream. Our life was very simple and I had no idea that strawberry shortcake was served any differently until I had it in a restaurant years later.

Fast forward to last week. We were having a middle of the week impromptu dinner with our friends but I was given a challenge. Make a gluten free meal as one of our friends is being checked for an autoimmune condition. We served arroz con pollo along with a salad for dinner and strawberry shortcake for dessert.

Since my husband and I don’t need to eat gluten free, I didn’t want to buy a lot of special ingredients that I might not need again. I found a pre packaged gluten free scone mix and made scones as the base for the dessert. We all loved the dessert so I thought I’d share the recipe with you.

Strawberry Shortcake, Gluten Free 

 Preheat the oven to 375 degrees with the cooking rack placed in the top third of the oven.

  • 1 (13 oz.) bag Pamela’s Biscuit & Scone Mix*
  • ½ c. sugar plus a little more for sprinkling
  • 1 stick (8 Tbsp.) butter, very cold, cut into small pieces
  • 1 cup milk (I used 1/4 c. milk plus 3/4 c. half and half) plus about 1 Tbsp. for brushing the tops
  • 1/4 tsp. vanilla

Line a baking sheet with a silicone baking mat (Silpat) or parchment paper.

Combine the dry mix and sugar in a bowl. Using a pastry blender, cut in the butter until the mixture resembles coarse meal.  Do not overwork the dough. Add the milk then mix until the dough just comes together. Scoop onto a piece of parchment or cling wrap then gently pat into a round, about 1 to 1 1/2 inches high. (If dough is sticky, wet fingers help shape the dough.) Cut into 8 wedges with a knife and place on the prepared cookie sheet using a spatula. If you wish, brush the scones with a little cream and sprinkle with sugar before baking. Bake 20 to 24 minutes until the tops are cracked and just starting to brown. Remove from the oven and let rest on the baking sheet (they are very tender) for a few minutes then place on a wire rack to finish cooling.

Strawberries

  • 1 pint fresh strawberries, cleaned and quartered
  • 2 Tbsp. sugar
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. Grand Marnier (optional)

Place clean and quartered strawberries into a bowl and sprinkle with sugar. Pour in the lemon juice and liqueur, if using, and stir. Let sit for several hours.

Whipped cream

  • 1 pint heavy whipping cream
  • 1 – 2 Tbsp. powdered sugar, or to taste
  • 1/8 tsp. vanilla (optional)

Place all the ingredients in a chilled bowl and whip with an electric beater until soft peaks are formed. Cover and chill until ready to use.

Place a scone on each dessert plate, top with strawberries and a dollop of whipped cream.

If you think you don’t have time to make dessert when you are entertaining friends, you might want to try this classic summertime dessert. In thirty short minutes, earlier in the day, I made the scones along with preparing the strawberries and whipped cream. All that was necessary, at serving time, was to place a scone on each plate, top with several spoonfuls of strawberries and their delicious juice, then add a dollop of whipped cream. During the winter, I could see making this dessert with pears poached in red wine.

These strawberry shortcakes are the perfect ending to a meal. Quick and easy to prepare, these buttery shortcakes topped with fresh fruit and whipped cream are delicious. I guess you could say…“summertime and the living is easy”.

Tell me, do you ever have spur of the moment dinners for your friends with only a couple of hours to prepare a meal? If so, do you make dessert from scratch, use packaged mixes or do you buy something ready made from your local bakery?

*I mentioned the scone mix that I bought but have not been compensated in any way. I was very pleased with this mix but I’m sure there are others like it on the market. I was happy that I could make our friend a gluten free dessert he could enjoy, without me having to buy lots of ingredients I might not use again. I’d definitely make gluten free scones again, even though my husband and I don’t have to worry about gluten in our diets. No one will ever know the scones are gluten free unless you tell them.

  1. Perfect Summer dessert. My mom made her own Angel Food Cake, usually frozen strawberries and Cool Whip. So yes, the real thing, when done right, is very special.

We have several friends who are celiac and part of my desire to create gluten-free food is so they can enjoy every aspect of the meal or be able to participate when we have a potluck. So often, the limitation of their diet means they eat before they go out, which is sad. I like that you were able to accommodate your friend without having to buy special ingredients — the package mixes sure to help in that way. What a lovely summer dessert. 🙂

They like Twinkies stayed soft and never got moldy after several months although we were not brave enough to taste test them. 😀

Thank goodness for new products coming on the market to use when you have guests that have dietary restrictions like our friend. I was pleasantly surprised with the scones I made, you would never know they were gluten free.

  9. Gorgeous, Karen! Strawberry shortcake is my favorite summer dessert and I’ve missed it since having to start eating gluten-free. I’ve been making mini pavlovas with berries and cream as a substitute, which is quite good, but doesn’t compare to a buttery biscuit. I, too, grew up on the spongy cakes…loved them when I was little but can’t imagine eating one now!

  16. I grew up with the EXACT same strawberry shortcake. My daughter and I have made it with Angel Food cake since, once from scratch but the rest with store bought AFC. And always Cool-Whip, but fresh strawberries of course. I know I can make my own whipped cream from scratch but the daughter is just fine with store-bought so there it is.     I read something really interesting about folks going GF–seems in many cases, these same people have no problem eating flour in other countries, or Organic here in the States. I came across an article online that was saying that wheat is now being “killed off” for harvest with glyphosates and that is the problem with the flour now. I know switching to organic helped me.

  21. I know what you mean. When I was a kid, we never had whipped cream that didn’t spray out of a can. I think my mom thought of cream as an extravagance, and of course if she had whipped her own, it’d’ve been by hand … so I can kind of see her point there. (Although when I need just a tiny bit of whipped cream, I love to whip it with a whisk, by hand, casually standing there pretending that I don’t think anyone’s watching, and when stiff peaks appear, I can’t tell you how many of my friends’ jaws drop, like I just performed a miracle. So then I just drop do a mic drop with the whisk.)

  22. That’s a great tip to use the gluten free scone mix. My mother always used Bisquick mix and I still use. My husband loves his strawberries so any cake with either ice cream or whip cream on top is fine with him as long as he gets his strawberries. Personally, I just have to have the whipped cream.

    Long ago though my younger sister was at my mother’s house when she served strawberry shortcake. I’m not sure that my sister has ever made anything from scratch so I was a little surprised when her daughter asked my mother if she could have the REAL whip cream on hers. My mother told her that it was real whip cream but my niece insisted and said “no don’t you have the REAL stuff that you squirt out of the can?”

  32. Karen, your shortcake looks fabulous. It’s very kind of you to go to so much trouble with a special dessert for your friends. I would never guess it’s gluten-free (I have experience with gluten free meals cooked by a friend and frankly her cakes were awful every time…).
    I have never bought a cake mix, but if I had last-minute guests (with mobile phones, internet 24h a day, etc. it never happens any more), I guess I’d ask them to bring some chocolates (which are sold in every street here 😉 ). Seriously, I always ask for a bottle if guests ask what to bring, so I’d make prune&chocolate truffles (the quickest chocolate treat I know) or simply make a fruit salad, or both, if I have time. I do this quite often when I am too lazy too make a complicated dessert (or when I simply crave my truffles 😉 ).

Although I only have one truly gluten free friend, I do stock the regular culprits to make gluten free flour (white and brown rice flour, corn flour, tapioca flour etc) because it seems there is always someone trying to avoid gluten at any given time. I like making my own flour because I can control the additives and preservatives, plus I need only make enough for that particular recipe. I started doing this years ago when gluten free products were not as common as they are today so I got into a groove. I will keep the scones you recommended on file because in a pinch, it’s always good to have a backup.
    Your strawberry shortcake looks wonderful and I’m sure everyone really enjoyed it, gluten free or not!
